Hello lovely Readers
The last couple weeks have been crazy busy once again. But I’m happy to say that I’m in a much better place than I was in the last Blogpost so thumbs up! You know I want to write about the dark moments in life because that’s just how it is. Even in the perfect instagram pictures of the most famous Bloggers you know not everything is how it seems. But I’m sure you know that already. So I don’t like to pretend that I’m perfect nor should you (except if you are perfect then go ahead 😉 ) So we can’t really control what life throws us in the way but we can do some things to make us feel better on our journey. I for instance write a list to remind myself of things I like to do and then I do them! That’s not a joke I do that for real! And on that list are things like; take baths, paint your nails, go get a massage, go out with friends, watch that movie or that series etc. and of course – eat healthy!

So all of us try to eat healthy. Some do it all the time and some do it from time to time. Either way I thought I could give you some of my favorite.. let’s call them recipes. What was really important to me is that they’re all really easy and fast to make. So even if you’re studying and are on a quick break there is time to eat something healthy and fresh that even gives you more energy!
Banana Bread
This is an amazing alternative to traditional bread. Bananas are naturally sweet therefore you don’t need sugar for this receipe. Although Bananas are high in carbs they’re a great source of Protein and healthy fat!
You need:
-2 ripe bananas
-1/2 cup ground almonds
-1 tablespoon sunflower oil
-3 eggs
-1 pinch of salt
-1 teaspoon baking powder
-1 teaspoon cinnamon
-A handful chia seeds
-Honey if you want
Mix all ingredients well, then grease baking dish and bake for 35 minutes at 170 degrees (preheated oven)
Rice Waffles with Peanut butter and fruit
Well you certainly knew that rice waffles are healthy, but did you know that they are fat free and low in calories? Since they don’t really have other nutrients we combine them with the delicious Peanut butter which is full of healthy fat and contains fiber, Magnesium, Vitamin E etc.
Frozen Berry bites
Okay so this snack you need to prepare a few hours in advance. You just have to fill the ice cube container (is that the real expression for it?) with Greek Yogurt and fresh fruit. Then you freeze it for a few hours and voilà, a sweet and healthy treat for you!
Avocado Toast with Feeta Cheese and Chia Seeds
I don’t think this snack needs an introduction since the whole world is obsessed with Avocado. But since this is my all time favorite and Avocado is incredibly nutritious it could not be lacking from this post.I use one Avocado per toast and then just smash it with a fork. Then I top it with Feeta, Chia Seeds and some Chives = A M A Z I N G!!
Banana Nice Cream
This ice cream is the perfect example that you don’t need an ice cream machine to make tasty homemade ice cream. All you need to do is freeze some Banana slices for a few hours, take them out for 5 minutes to defreeze a little and then put it in the mixer (I always add a little rice milk to make it creamier). No sugar and no preservatives!
Deliciously Ella’s Chia Energy Balls
Since I’ve been so obsessed with this recipe lately I couldn’t hide it from you guys! I can’t tell you enough how amazing these power-balls are! Seriously they’re stuffed with the most amazing ingredients but careful, you need a really powerful mixer for this as the dates are really hard to process!
– 1 cup of medjool Dates (Protein & vitamin rich, promotes digestion etc.)
– 3/4 of a cup of almonds
– 2 tablespoons of chia seeds
– 1 tablespoon of coconut oil (for a great skin and hair, reduces hunger etc.)
– 1 tablespoon of raw cacao powder (lowers the blood pressure, improves cognitive function, contains Magnesium etc.)
